The harvest is just around the corner, and this year we are introducing some exciting innovations. In 2026, for the first time, we will harvest our Piantone di Mogliano, adding this new cultivar to our collection. The olives will be harvested by hand using buckets, and we are looking forward to discovering the distinctive and harmonious aroma of this new EVOO.
We will also pick some of our Leccino olives at an early stage of ripening. This early harvest will allow us to produce an EVOO with a very high polyphenol content, meeting the expectations of those customers who particularly value the health-promoting and nutraceutical properties of EVOO. Careful observation of the olives, combined with state-of-the-art extraction technology will be key to this new production.
This year also brings an important innovation in response to the changing climate. In fact, the olives from our early harvest will be refrigerated immediately after picking and before extraction. This additional step is crucial in preserving both aromatic profile and high polyphenol levels despite increasingly high temperatures during harvest season. At the same time, we continue to strengthen our commitment to sustainable farming and production, looking for ways to reduce our environmental impact and care for the land that makes our oils possible. The installation of the new solar panels is another step in this direction.

While looking to the future, we remain committed to honoring Tuscany’s rich history: starting with the 2026 harvest, our monovarietal EVOOs will feature symbols representing the initials of their names in the Etruscan alphabet. For centuries these proud people lived and walked these lands, and their culture remains an integral part of Tuscany’s heritage. For us, Harvest 2026 is not simply about repeating the same mechanical processes year after year: it is about moving forward, embracing the challenges of our time without forgetting our roots.
