The Cipressino olive variety was selected in the 1960s by the Pietrafitta nurseries in Palagiano, in the Apulia region of southern Italy. Originally, it was planted as a natural windbreak to protect surrounding crops. Only in recent decades has it been cultivated extensively for olive oil production, particularly in Sardinia.
Our organic monovarietal Cipressino extra virgin olive oil is characterized by a harmonious balance of medium fruitiness, bitterness, and pungency. Its defining characteristic is an elegant aroma of fresh almond.
Ideal with fresh green salads, Caprese salad, cold pasta dishes, grain and cereal salads.
